Flourless Oatmeal Almond Butter Chocolate Chip Cookies Recipe

Ingredients

  • 2/3 cup gluten-free rolled oats
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt (reduce to 1/2 teaspoon if your almond butter contains any added salt)
  • 1 teaspoon cinnamon
  • 1 cup almond butter
  • 2/3 cup dark brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2/3 cup chocolate chips

Instructions

Preheat the oven to 350F. Line 2 baking sheets with parchment paper.

  1. In a medium bowl, combine the oats, baking soda, salt and cinnamon. Stir to combine.
  2. In the bowl of a stand mixer, beat the almond butter, brown sugar, eggs, and vanilla until smooth, about 2 minutes.
  3. With the mixer on low, slowly add the oat mixture. Mix until combined. Stir in the chocolate chips. The dough will be very sticky!
  4. Scoop 2 tablespoon rounds of dough onto the prepared cookie sheets. Bake each batch for 9-11 minutes. Cool 2 minutes before removing from the cookie sheet. Transfer to a wire rack to cool completely. Enjoy!

Asian Almond Butter Sauce Recipe

Ingredients

  • 1 tablespoon unseasoned rice vinegar
  • 2 teaspoons oil of choice
  • 1 teaspoon sesame oil
  • 2 tablespoons almond butter or cashew butter
  • 2 teaspoons low sodium tamari or soy sauce
  • 1 teaspoon finely grated or pureed ginger from jar
  • 1 clove finely chopped garlic
  • 1-2 teaspoons honey

Instructions

Place everything in a small bowl and stir together until smooth. Use thick or thin with a little warm water.

A diet with zero snacking is just too hard to maintain. Sometimes we need to satisfy that sweet tooth between mealtimes with something more than carrot sticks, or we need that boost of energy when we’re on the go. Fortunately, Justin’s has delicious, healthy snacks for us, so you can munch away without feeling an ounce of guilt. 

Justin’s snack packs consist of gluten-free pretzels or banana chips and nut butter for you to dip the pretzels in – a lovely, satisfying combination of sweet and savory. The nut butters are dryer and thicker, more like a paste than a creamy butter, which isn’t necessarily a bad thing. You don’t get a layer of oil on the top that has separated from the butter-like often happens with natural nut butters. They come with thick pretzels so that they don’t break while dipping them into the thick butter.

I was under the impression that Justin’s snack packs are sold in three flavors: Classic Almond Butter + Pretzels, Honey Peanut Butter + Banana Chips, and Chocolate Hazelnut Butter + Pretzels. However, on Justins.com only two varieties were shown on the website: Classic Almond Butter + Pretzels and the Honey Peanut Butter + Banana Chips. I’m not sure if Justin’s stopped selling the Chocolate Hazelnut snack packs or if they sold out… You might be able to find the Chocolate Hazelnut Butter + Pretzels in Target.
